Baking one of our gluten-free premixes for the first time? Here are the questions we hear most often from first-timers, so you can bake with confidence, not anxiety.

What if I mess it up?

You won’t ruin your baked goods! Gluten-free baking is more forgiving than many people think; without gluten, you can’t overwork or spoil the dough with excessive handling. Just follow the package instructions step by step. If something looks a bit different from a typical recipe, that’s perfectly normal, as gluten-free doughs are designed to behave differently.

My dough looks different to what I expected, is that normal?

Yes. Gluten-free dough is often wetter, stickier, or looser than wheat-based versions; that’s how it gets a good texture without gluten. If it looks unusual but matches the consistency described in your pack instructions, you’re on track.

Do I need special equipment?

No specialist kit needed. A mixing bowl, measuring spoons or scales, and a standard oven are enough. A stand mixer helps but isn’t essential; you can mix everything by hand.

Why didn't it rise as much as I hoped?

Gluten-free bakes typically rise less dramatically than wheat versions; that’s expected, not a failure. Make sure your kitchen is warm enough to proof your bread.

How do I store the premix before I use it?

Because it’s made fresh with no preservatives, keep it in its heat-sealed pack in a cool, dry place and use it by the date on the pack. Once opened, use promptly.

Can I freeze the baked result?

Most bakes freeze well once fully cooled. Wrap tightly and use within a few weeks for best texture, then defrost at room temperature.

It came out denser or crumblier than I expected. Did I do something wrong?

Probably not. Gluten-free bakes are naturally a bit denser or more delicate than wheat ones. Slightly under- or over-measuring liquid is the most common cause of texture issues, so double-check quantities next time, and it’ll dial in.

Is this safe if I'm coeliac, not just gluten-free by choice?

Simple Bake premixes are made specifically for gluten-free needs. If you have coeliac disease or a diagnosed intolerance, always check the ingredients and allergen info on your specific pack, as formulations can vary by product.
