Simple Bake Bread Premix First Bake FAQ

First time baking our gluten-free bread premix? Here's everything you need to know so it turns out well, and what's completely normal along the way.

Why is my bread dough sticky and wet, not like a normal wheat dough?

That's completely normal for gluten-free bread. Without gluten to bind and stretch, our bread premix is designed to make a wetter, stickier dough than you might be used to; this gives it a good crumb and rise once baked. Wet hands or a lightly oiled spatula make it much easier to handle.

Do I need to knead the dough?

There's no need for traditional kneading, as there's no gluten to develop. Simply mix the ingredients until everything is well combined and smooth. You can use a stand mixer with a paddle or hook attachment, or a sturdy spoon and some elbow grease to achieve this.

Why didn't my bread rise as much as a normal wheat loaf?

Gluten-free loaves rise less dramatically than wheat bread; that's expected, not a sign anything went wrong. For the best rise, prove in a warm, draught-free spot and make sure your raising agent is within date.

How do I know when my bread is fully baked?

Carefully tap the bottom of the loaf of bread with the tips of your fingers. Listen for a hollow sound, which indicates that the bread is properly baked and has a good texture inside.

Why does the crust look pale or different to shop-bought bread?

Gluten-free crusts often colour differently since there's no gluten network to brown in the same way. If you'd like a deeper crust, bake it uncovered for an extra 5 minutes at the end, or brush it with a light egg or milk wash before baking.

Can I slice it while it's still warm?

It's best to let it cool for at least 30–50 minutes before slicing. Gluten-free bread is more delicate straight out of the oven, and slicing too soon can make it seem gummy or crumbly, even though it's fine once set.

Why does it go stale faster than shop-bought bread?

Since it contains no preservatives and is made fresh, it resembles a bakery loaf more than a supermarket one. It is best enjoyed within a few days at room temperature, stored in a bag or container.

Can I freeze it?

Yes, you can, but slice it first, then freeze it in a sealed bag. Toast or defrost slices individually, and they hold their texture well for a few weeks.

I though this was going to fail- it didn’t

I did find the instructions a little odd, to weigh water? I didn’t have much hope for the bread as I couldn’t get the sourdough starter to bubble, (it was really thick) even though in the heatwave my kitchen has been a constant 24c and I left it 4 days, and kept spitting. Then the dough didn’t rise at all in proving …BUT! The bread tastes really good, it wasn’t the ‘brick I expected. I’m going to order again but need to advice on how to get the starter bubbling.

We're glad to hear the bread turned out tasty. We use water by weight, as it is more accurate than using a water measuring jug.

You could add a little more room-temperature water to your starter.

I used the kit as Directed but I did add an extra day of doing the starter to really get it going - it may have been a bit cold before. The bread is delicious, although I think I should have cooked it a little more than 35 minutes but I tapped it and it sound hollow so I thought it would be fine - this was my fault as the directions do say it may need longer. So, I will buy the kit again to check but if you are trying for the first time, give it a bit more time.

Package arrived. Had to pay an extra £3.50 for Royal Mail to deliver as packaged wrong.

Contacted simply bales last week. Not heard back.
Never use again.

We did reply to you and sent you a replacement when the original did not arrive, but it did arrive in the end. So you end up with 2 orders for the price of one.

No success with the sourdough starter yet

Great concept but, so far, I am struggling to get the sourdough starter to start! Instructions are not complete (and are too small!) - e.g. does not say to add warm water to the starter or that tap water (with chlorine) may kill the yeast.
I'm waiting and hoping that the starter will spring to life after feeding it over coming hours (or days!)
